• 500 g tagliatelle
• 250 g smoked beef ham
• 4 eggs
• 30 cl fresh cream, salt and pepper
• To serve: 80g freshly grated parmesan
In salted water boil the tagliatelle for 8 mn.
Drain the tagliatelle and reserve a cup of cooking water
Put the reserved cooking water with the tagliatelle, smoked beef ham cut into regular pieces and fresh cream.
Continue cooking over medium heat, stirring gently for 6 minutes
Serve with a raw egg yolk and accompanying with parmesan
